Introducing Alcides Avendaño, a quality driven farmer in the Huila region of central Colombia, and a premium producer of the Coocentral Cooperative. This coffee is so, so special to us. It is the result of a relationship we've been building with a new specialty importer (more on that later) and really reflects the values we care about including farm-level sustainability, community vitality at origin, long term farmer livelihood, the human role in global agriculture, and relentless dedication to cup quality. We love this coffee so much that we bought the ENTIRE season's harvest from this farm. This is the single biggest purchasing commitment we've made so far as a company and one we hope will allow Alcides and his family to continue producing exceptional coffees for years to come.

In the profile we find ripe fig, Muscat grape, rosé like tannins and a cloyingly sweet, maraschino finish. Starting next week you can find it on our website and in store. If you're a subscription holder, you'll see this beauty in your mailbox after the 1st. What a way to welcome spring.
In retrospect, I should have made this yesterday for Valentine's Day but in futurespect, who cares. Beet and roasted apple borscht, shallots, herbs, imperceptible ginger. Ask for the off menu version with tangy coconut yogurt and mid-90s chive batons.

This thing is made from all ingredients sourced at the Capitol Hill Night Market. Winter chanterelles, Old Chaser potatoes, wrapped in wild nettles and bound in tarragon aspic. All vegan, all local, all for you.
WELL WHAT DO WE HAVE HERE. A perfect little cake made from Washington cornmeal, fermented coconut milk, salt, fat, time. No gluten, no sugar, no faux flours, no weird binders. In other words, a gluten free, vegan pastry that doesn't taste like already-chewed cardboard candy. You're welcome.

This weekend's special is a needlessly complicated version of beans on toast made entirely with produce bought at the Capitol Hill Night Market. Wildwood farms cranberry beans briefly smoked over apple wood and then made half into a purée before poaching the rest in a brine of olive oil, farm garlic, fresh herbs and champagne vinegar. 
Then, because we are masochists, we salt roasted some Old Chaser Farm sunchokes and also made tiny chips out of them for "fun". Oh and we're bringing in this Spanish soft sparkling water now because Topo Chico started tasting weird in the last couple months which I guarantee absolutely no one notices or cares about except us but in case you do, here it is.

Remember when Le Gourmand closed and we all cried? Bruce and Sarah are tired of your whining so they opened another place to shut you up. Marmite is casual French perfection based around Bruce's obsessive mastery of the soup kettle. Before they launch a full dinner service, they've been quietly open for lunch and now brunch. I really wanted to have something poignant to say about this impending inauguration hellscape nightmare but it's hard to fit a lifetime of intersectional politics on the face of a cookie so here's a pretty honest reflection of the exasperation and dread we're under. A portion of proceeds both online and in the cafe this weekend will be donated to @thecairproject which helps provide access to abortion services here in Washington including lodging and transportation assistance for those who may need to travel long distances to clinics and follow up care.

In which we challenge ourselves to make new products using only what we have in house and end up making some of our most favorite stuff yet.
